All uni is market pricing and changes week to week. Hokkaido uni is imported from Japan by plane and is best consumed on Friday (requires 1 week preorder)
Choose from
Santa Barbara Uni / grade AA / 200g / plastic tray - $150~$200
Hokkaido Uni / grade A / 250g / wooden tray - $260~$320
*** Uni or sea urchin is rated by grades with AAA being the best, followed by grade AA, grade A, and B/C grades being the highest grades found at supermarkets ***
Note - Uni can be a hit or miss - regardless of where the uni is from, uni should taste like a clean ocean, creamy, subtly sweet.
if the uni seems watery, melting, and tastes bitter, these are signs of the uni deteriorating
If the uni no longer looks vibrant, runny, has a bad smell, the uni is no longer safe to consume
With this information in mind, know that cost does not guarantee the best product. It comes down to how that uni was harvested, how quickly and cleanly it was processed, packaged, and stored until it arrives on your plate.
Sometimes grade A hokkaido is super sweet and in perfect condition and tastes way better than grade AA Santa Barbara uni. Other times, the Santa Barbara uni is better quality than the Hokkaido Uni
